
Keeping Your Oven Temp Steady with Short-Wave IR
Anyone who’s spent time in a kitchen knows the struggle. You open the oven door for two seconds to check on something, and boom—all your heat vanishes. Or you slide in a freezing cold tray, and the oven just sits there, struggling to get back up to temp. Standard heating elements are just too slow. They have to heat the air, which then heats the food. It’s a clunky process. That’s why we use short-wave infrared (SWIR) lamps. Instead of messing around with the air, these lamps shoot energy directly into the food. It’s fast. Really fast.
Stopping the Dip
To actually fix those temperature drops, you can’t just “set it and forget it.” You need a system that thinks on its feet. We pair our SWIR lamps with high-speed thermocouples and PID controllers. Think of it as a constant conversation: the sensor tells the controller the temp is dropping, and the controller tells the lamps to kick in. The best part? Short-wave lamps have basically zero lag. They hit full power in milliseconds. While a normal oven is still “waking up” after you close the door, the IR system has already filled the gap. You get a steady, flat line of heat instead of that annoying roller-coaster effect.
The Hardware Side of Things
Here is the catch: this kind of precision puts a lot of stress on your gear. When the system spikes the power to compensate for a heat loss, it pulls a lot of current. If you use cheap wiring or basic relays, they’re going to burn out. They just can’t handle the constant clicking on and off. We always go with Solid State Relays (SSRs). No moving parts, no mechanical wear, and they can handle the rapid cycling without breaking a sweat.
Getting the Setup Right
You can’t just toss these lamps in and hope for the best. Placement is a big deal. If the lamps are too close, you’ll char the top of your food while the middle is still cold. Too far? And you lose that instant recovery time. We’ve found that a staggered array works best. It spreads the heat evenly across the rack, so every inch of your food gets the same treatment, regardless of how chaotic the rest of the kitchen is.
